Potato Candy

A traditional candy made with powdered sugar, potato and peanut butter. It may seem blindingly obvious, but this recipe contains peanuts.

Ingredients:
2 cup

Peanut Butter
2 lb

Powdered Sugar (approx)
1 lb

Russet Potatoes
Directions:
  1. Bring a large pot of water to a boil.
  2. Skin the potatoes and cut into small (2 inch x 2 inch) chunks. Add to the boiling water.
  3. Boil the potatoes until the a fork or skewer meets no resistance when jabbed into the potato chunks.. Drain the water mash the potatoes.
  4. Slowly begin adding powdered sugar to the mashed potatoes. The mixture should thin out and then begin to thicken into a dough after a few minutes.
  5. When the potato/powdered sugar mix has reached a dough-like consistancy, sprinkle some powdered sugar on a flat surface covered in plastic wrap, such as a cookie sheet or counter top. Flatten the potato dough into the powdered sugar and use a knife to spread the dough out into a 1/4 inch thick sheet.
  6. Spread a thin layer of peanut butter over the top of the potato dough.
  7. Starting at the edge closer to you, roll the sheet of dough into a small column. You can use the plastic wrap to lift/start the roll but take care that the wrap does NOT stick to your dough as you roll it.
    When complete you should have a more-or-less round bar of potato dough with a peanut butter spiral inside.
  8. Place the rolls in a sealed container and allow them to set in the refridgerator for at least two hours.
  9. After the dough has hardened, remove from the refridgerator and cut the bars(s) into 1/2 - 3/4 inch thick slices. You should have small discs of candy with a peanut butter spiral leading outward from the center.
