Basic Jamabalaya

A simple jambalaya

Cook Time: 45 Minutes
Serves 6-10
Ingredients:
1/2 lb

Spicy Sausage (Andouille is traditionally used, any spicy sausage will work)
2 cup

Chicken Broth
1/2 lb

Diced Chicken Breast
1 tsp

Salt
4 cup

Water
1 tsp

Paprika
1 tbsp

Cayenne Pepper
3 whole

Celery Stalks
2 cup

Rice
1/2 whole

Medium-sized Onion
2 whole

Green Onions
12 ounce

Tomato Paste
Directions:
  1. In a stock pot, add together a small amount of olive oil, the diced chicken and diced sausage. Toss over medium heat until the chicken begins to brown.
  2. While the meat is cooking, dice the celery, green onion and regular onion.
  3. When the chicken and sausage have been fully browned, add the tomato paste, water, chicken broth, vegetables and spices to the pot. Stir to combine.
  4. When the sauce begins to boil and the tomato paste has been fully combined and the sauce begins to boil, add the rice and stir to combine.
  5. Reduce heat to medium-low to low. Simmer for 25 minutes or until the rice is fully cooked.
