Basic Jamabalaya

Ingredients:
1/2 lb
Spicy Sausage (Andouille is traditionally used, any spicy sausage will work)
2 cup
Chicken Broth
1/2 lb
Diced Chicken Breast
1 tsp
Salt
4 cup
Water
1 tsp
Paprika
1 tbsp
Cayenne Pepper
3 whole
Celery Stalks
2 cup
Rice
1/2 whole
Medium-sized Onion
2 whole
Green Onions
12 ounce
Tomato Paste
Directions:
- In a stock pot, add together a small amount of olive oil, the diced chicken and diced sausage. Toss over medium heat until the chicken begins to brown.
- While the meat is cooking, dice the celery, green onion and regular onion.
- When the chicken and sausage have been fully browned, add the tomato paste, water, chicken broth, vegetables and spices to the pot. Stir to combine.
- When the sauce begins to boil and the tomato paste has been fully combined and the sauce begins to boil, add the rice and stir to combine.
- Reduce heat to medium-low to low. Simmer for 25 minutes or until the rice is fully cooked.
